With a career that spans over 40 years, Mark Bennett is one of the most respected and acclaimed bakers in Britain. In 2012, after thirty years of working as a third-generation master-baker at his family’s bakery business in Poole, Mark and his wife, Emma, made the life-changing decision to open Patisserie Mark Bennett in Penn Hill. Some of Mark’s signature bakes at Patisserie Mark Bennett have become legendary. Take, for example, his ground-breaking Sausage Rolls, revolutionary Chocolate Antoine, and his signature stone-baked Pain au Levain. Something as simple as a croissant becomes iconic in Mark’s hands.
With the business going from strength to strength, you can now find Patisserie Mark Bennett shops in Lilliput, Ashley Cross, Broadstone, the Bakehouse on Waterloo Road in Fleetsbridge, Christchurch and Penn Hill.
Sourdough
Our handcrafted sourdough is made using long, traditional processes. A day in advance, our dough is left to ferment overnight for around 16 hours. This slow fermentation process gives our bread a depth of flavour and texture that builds up naturally. The following day, once fermentation is complete, each loaf is proved, shaped and stone-baked. So, the bread you see on our shelves each morning truly is as fresh as it comes.
Whether you fancy our German inspired Five Seed Sourdough, Mark’s signature Pain au Levain or our stone-baked Pain de Campagne baguettes, our Sourdough range means there’s something for everyone. Dunk it in a gooey baked camembert, layer it up for a toasted sandwich, or top it with a generous helping of salted butter and jam. We really do have bread for every occasion.
Coffee
The coffee in our coffee shops comes from our longstanding suppliers, Clifton Coffee Roasters. Their single-origin beans are sustainably farmed in Brazil, and naturally pulped, with the flavour profile changing depending on the roast. This gives the coffee a rich, easy-drinking flavour with notes of rum raisin, dark chocolate and marmalade. Not only is it the best coffee we’ve tried, but Clifton Coffee’s ethos is a match made in heaven with ours.
